Simon Faure is a young winemaker from Vergisson, in the heart of the Mâconnais. A former electrician, he transitioned to winemaking in 2023, purchasing three hectares of land. He works without additives, with minimal intervention, allowing the pure limestone terroir of the region to express itself with precision and freshness, despite his short track record.
Description: An original, refreshing Chardonnay with herbaceous, caper-like aromas and a beautiful tension. Tight and energetic on the palate, with high natural acidity that gives the wine an iodine-like, mineral sharpness, and a long, tense finish.
Pairs well with: Summer salads, fresh goat cheese, or by itself as an aperitif.
Fun fact: Chef Un P'tit Vert is the very first vintage from Simon's own estate, his debut harvest of 2023, made from carefully hand-selected and harvested Chardonnay grapes.
