While it is important to Christian Ebert that each vintage tastes different, he values a clear profile much more. His wines represent different types. They have character because they are true Saar wines. Schloss Saarstein believes in making wine in harmony with nature, although Ebert does not have a certificate because he wants to keep his options open. He categorically rejects the use of artificial fertilizers and insecticides. What is very important to him, however, is the age of the vines. Age determines quality, and depending on the quality, Ebert decides which grapes are used for which wine.

Description: Lots of fruit, peach, apricot, long finish and fresh.

Goes well with: Liver, spicy dishes, cheese, fruit desserts.

Fun fact: An Auslese is not by definition a sweet wine. The better winemakers, particularly in the Mosel region and the Rheingau, are able to produce 'dry' Auslesen. These are wines where almost all the sugar ferments during vinification.
