Roland grew up among the vines. As a child, he ran through the rows of Chardonnay as if it were an endless playground. His grandparents' stories were his first lessons: tales of cold winters that tamed the vines, of hot summers in which the grapes gathered sugars, and especially about the secret of Chablis—the Kimmeridgian soil, full of fossils as old as time itself. "Listen to the stones," his father often said. "They'll tell you what to do." When Roland took over the winery, he had no need to transform himself into a revolutionary winemaker. Above all, he wanted to listen—to the vineyard, to the old practices, to the years of family knowledge. But listening is precisely what made him modern. Because where his ancestors worked traditionally, Roland saw what worked and what didn't. He opted for natural fermentation, minimalist intervention, and letting the fruit speak for itself. No tricks, no frills. If the wine wasn't genuine, it was a failure.
