RIPA is the wine project of the Spanish couple behind Finca Sandoval in Manchuela. The Vino Rosado Cosecha is a dry rosé made from Garnacha and Viura grapes, sourced from organically farmed mountain vineyards in the DO Utiel-Requena, near the border of Castile and Valencia. Short maceration, fermentation in stainless steel for a fresh, modern style.
Description: Light salmon pink with aromas of fresh strawberry, raspberry, citrus blossom, and a subtle minerality. Dry, fresh, and lively on the palate, with good balance and a clean, juicy finish.
Pairs well with: Tapas, gazpacho, grilled fish, light summer salads, or as a terrace aperitif.
Fun fact: Utiel-Requena, RIPA's home region, is known for its high altitude (700–900 meters) which provides unparalleled freshness under the warm Spanish sun—a characteristic that gives this rosé its distinctive vibrancy.
