Marc started in the municipality of Zellenberg about 25 years ago. He bought an ancient wine estate (built in the 18th century) against the foothills of the Vosges. In 1995, Tempé invested in large oak barrels, ranging from small to almost 6000 liters. Marc loves tradition. He is very clear about this, even when it comes to winemaking. To use his own words: "Zéro trucage" (zero tricks). Everything happens with minimal intervention and as few machines as possible. The only machine on the estate is the press. Some wines are released relatively late, for the simple reason that they ferment and mature in the barrels for more than 2 years. The use of sulfite is minimal; only for bottling is some sulfite added to protect the wine.
Description:Toasty, rich, almost creamy yet fresh, energetic.
Pairs well with: Asparagus, fish with butter sauce, crustaceans and shellfish, quiche, and soft white cheeses.
Fun fact: This wine has matured for six years (!) in Burgundy barrels.
