Born (1956) in Paris, sandwiched between the railway and the motorway and under the flight path of Orly, little Bertrand Ambroise dreams of space, peace, and quiet... He wants to become a shepherd. Fate decides otherwise. At agricultural school, it later turns out that the only available place is in viticulture. There he meets Martine Dupasquier, a winemaker's daughter from Prémeaux, near Nuits-Saint-Georges, and in 1985 Ambroise becomes a winemaker on her parents' estate.
Description: Fresh and stylish with notes of toast, ginger, butter, and vanilla. Matured for 12 months in old wooden barrels.
Pairs well with: Fatty fish, grilled chicken with lots of different vegetables.
Fun fact: Due to the serious attention paid to the vineyards (and not just the grands crus), which are cultivated almost organically, even the entry-level wines are distinctive. Like this one.
