Jules Desjourneys is the project of Fabien Duperray, a winemaker who, after a career as a top sommelier, entered the vineyards of Beaujolais and elevated Gamay to an art form. In biodynamically cultivated vineyards with grapes at least 70 years old, he vinifies in concrete or glass, without oak for flavour, to achieve the purest expression of the terroir. Chénas — one of Beaujolais' smallest and least known crus — provides the grapes for this wine, named after the expression 'Ni Trop, Ni Trop peu': not too much, not too little. A perfect description of the objective: balance, precision, elegance.
Description: Ruby red with floral aromas of peony, black cherry, red forest fruits, and spices. Fine-grained and juicy on the palate, with lively acidity, soft tannins, and a refined, lingering finish.
Pairs well with: Braised pork, a simple entrecôte, lentils with smoked bacon, or Lyonnaise sausages.
Fun fact: The wine is named after an expression from the domain itself: the ideal balance, neither too ripe nor too green, neither too powerful nor too light. That sounds simple but requires years of precision work in both vineyard and cellar.
