Jules Desjourneys is the alter ego of Fabien Duperray, a Beaujolais winemaker who, after years as a top negociant for big names in Burgundy – Coche-Dury, Arnaud Ente, Christophe Perrot-Minot – started his own domain in 2007. His approach is biodynamic and radical: horses plow the soil, yields are extremely low, and the grapes are sorted multiple times, including on an optical sorting table. His white Beaujolais wines are aged for a long time on the fine lees in barriques, using oak not as a flavouring agent but as a tool for refinement. Domaine Jules Desjourneys is quickly mentioned in the same breath as the absolute best of the Mâconnais. The wine is named after pataphysics – the science of exceptions – conceived by writer Boris Vian.

Description: Fresh and precise, with aromas of white flowers, green apple, citrus, and wet stone. Bright and mineral on the palate, with lively acidity and a long, elegant finish that makes you completely forget the Chardonnay varietal.

Pairs well with: Fresh goat cheese, grilled river fish, white asparagus, or classic Lyonnaise cuisine.

Fun fact: Fabien Duperray holds his wines for five to six years before release – much longer than is typical in Beaujolais – so that they already show part of their aging potential at the time of sale.
