The domain was started in 1978 in Cruzille by Jean-Gérard Guillot and his wife Jacqueline Broux. Before that, he worked at his parents' domain and then in Brouilly and Meursault. Now, the management is in the hands of his sons Emmanuel and Patrice Guillot. They own 17 hectares of vineyard in the Mâcon Cruzille and Mâcon Chardonnay appellations. Most of the vineyards are east-facing on clay-limestone soils. They have been working organically from the start, and the vineyards have been certified since 1991.
Description: Typical Mâcon, refined, cool, full-bodied and rich in flavor, yet also elegant and refreshing.
Delicious with: Grilled fish and vegetables, soft cheeses.
Fun fact: Yields are between 30 and 55 hl/ha and all grapes are harvested by hand. In many vineyards, the planting density is very high, 10,000 plants per hectare. This leads to more competition between the plants and more concentrated juice in the grapes.
