Domaine Giacometti is the winery of brother and sister Simon and Sarah Giacometti, located in Le Désert des Agriates, a rugged and windy coastal strip below Saint-Florent, in the southernmost part of Patrimonio in Corsica. It is the only part of the appellation with weathered granite soils, where in addition to niellucciu, sciaccarellu also thrives. The domain works organically (Ecocert-certified) and vinifies with minimal intervention: wild yeasts, concrete vats, no filtration and a low sulfite content. This approach yields wines with a lot of character and drinking pleasure, and has now secured Giacometti a firm place among the most interesting names on the island.

Pairs well with: Grilled fish or goat cheese.
Fun fact: Niellucciu, the main grape of this rosé, is nothing more than Sangiovese under its Corsican name. Sciaccarellu, the other local grape in the blend, is found exclusively in Corsica and smells of the island's wild herb bushes (maquis).
