The domain was founded in 1989 by François with a few hectares in Montlouis-sur-Loire. He approaches the specific vineyards as his own and unique terroirs and was early on convinced of their magic and richness. Certification for organic viticulture followed quickly in 1992 and for biodynamics in 1999. Today, the domain covers 37 ha of vineyards with 20 ha of Chenin Blanc in Montlouis-sur-Loire, 10 ha of Chenin Blanc in Vouvray, and the remaining 7 ha are planted with Sauvignon, Pinot Noir, Gamay, Grolleau, Cabernet Franc, Côt and Pineau d'Aunis in the Touraine.
Description: Wonderfully refreshing and fruity, gooseberry, lime, with mineral notes and soft acidity.
Pairs well with: Raw fish, also oysters and, for example, a shrimp cocktail.
Fun fact: François Chidaine is a perfectionist in the vineyard. According to him, great wine is not made by the winemaker's manipulation, but born at the vine.
