Envínate is the project of four oenologist friends – Roberto Santana, Alfonso Torrente, Laura Ramos and José Martínez – who focus on exploring old, Atlantic-influenced terroirs on the Iberian Peninsula and the Canary Islands. Táganan is the old name for a rocky vineyard area on the northeast coast of Tenerife, where vines 50 to 150 years old are rooted in primary volcanic rock, just above the Atlantic Ocean. Due to the rugged terrain, all work is done by hand or with the help of animals. The wine is a field blend of Listán Negro, Negramoll, Listán Gacho and other indigenous varieties, harvested and fermented together by parcel. Matured for 12 months in neutral old oak barrels.

Description: Lively and energetic, with aromas of red fruit, wild herbs, light smoke and a distinctive salty minerality from the sea and the volcano. Light and delicate, yet layered and long.

Pairs well with: Lightly chilled with grilled squid, roasted chicken, spicy tapas or a platter of aged local cheeses.

Fun fact: Animals are still used to transport the grapes from the steep rock faces — one of the rare places in the world where viticulture would literally be impossible without animals.
