Dominio do Bibei is located in the heart of the small Ribeira Sacra region, in northwestern Spain. The climate is Atlantic and the land rugged. According to the winemaker, the reflection of a vintage is the beauty of wine. It is different every year. A bank of fog covers a large part of the banks of the Bibei river. The view over the river is breathtaking and even a little calming. It is therefore not surprising that monks settled here in the past and planted the first vineyards.
Description: Aromas of black cherries, raspberries, pine, and is subtly smoky. The taste is round, smooth, and elegant.
Pairs well with: Light meat dishes, poultry.
Fun fact: A four-day maceration takes place, after which the wine ferments partially in oak barrels of 45, 35, and 25 hectoliters and in cement vats. The wine then ages for 20 months on its lees in 1, 2, and 3-year-old French oak barrels. After that, the wine rests for another 18 months in the bottle.
