Domaine Pattes Loup is the project of Thomas Pico, one of the most talented winemakers of the new Chablis generation. On his 7 hectares of organically farmed plots around Chablis, he works exclusively with indigenous yeasts, no filtration, and minimal sulfites. The Vent d'Anges Mise Tardive is a special cuvée: a late bottling that has spent extra time sur lies, for a more concentrated, complex expression of Chablis' limestone soils.
Description: Golden yellow, deep and expressive, with aromas of ripe lemon, white peach, beeswax, and an intense, pure chalky minerality. Full and round on the palate, with fresh acidity, a broad texture, and an endless, saline-mineral finish.
Pairs well with: Oysters, scallops, lobster, grilled sea bass, or classic Chablis dishes with escargots.
Fun fact: 'Mise Tardive' (late bottling) is a technique rare in Chablis but adds an extra dimension to the wine — more texture, more complexity, and a minerality that leaves an even deeper impression on the palate.
