The domain was founded in 2016 by Maya Sallée and Nicolas Fernandez, two young winemakers who met during their studies and used their global wine experiences (including Uruguay, New Zealand) to shape their vision of natural, expressive wines. They settled in the village of Trespoux-Rassiels (Trespotz) on the calcareous plateaus above Cahors, an area at 340m altitude that offers excellent conditions for Malbec and Merlot due to the combination of Kimmeridgian limestone, marl, and red clay. From the start, Maya and Nicolas worked organically and biodynamically (certification around 2019–2020), with the goal of prioritizing soil health, biodiversity, and minimal intervention in the cellar. Their vineyards are minimally disturbed; they work without pesticides or herbicides, and compost, herbal preparations, and natural mulches are used to stimulate soil life, which enhances the quality and complexity of the wines.
Description: Fresh expression of ripe red and black fruits such as cherry and blackberry, accompanied by floral hints (violet), soft herbs, and a mineral, almost saline undertone. The mouthfeel is juicy and silky smooth, with lively acidity, supple tannins, and a long, balanced finish.
