Laurent Fournier is one of the better-known winemakers in Marsannay, and a driving force behind Les Aligoteurs; a group of young and talented winemakers who have brought the Aligoté grape back from obscurity in recent years. He cultivates his vineyards biodynamically and uses gravity in winemaking so that the wines do not have to be pressed by pumps. He also uses large Austrian oak barrels, which suits his elegant, full-bodied, and very fruity winemaking style.
Description: Fresh, mineral, and fruity like citrus.
Great with: Pretty much anything from the sea.
Fun fact: Along with well-known classmates Vincent Latour and Olivier Lamy from the Lycée Viticole in Beaune, Laurent took over from the previous generation at roughly the same time.
