The estate dates back to 1840, and the 5th generation, three sisters Delphine, Cendrine, and Rosaline Faraud, are now at the helm. At Cayron, intervention is minimal, and they are not proponents of new wood. The wine is given space to develop naturally, and corrective intervention only occurs when necessary. Unlike some other estates, no prestige cuvée is made. For many years, in December, the blend has been made from the separately vinified grape varieties, resulting in a single wine made from the finest fruit. Maturation follows in their own old foudres for 12 months, and no fining or filtering takes place.
Description: Classic Gigondas with a pure and clean character. It is a robust wine with glowing power and pure grape aromas in a muscular, full flavor, subtly spiced. In rich vintages, they develop truffle scents.
Pairs well with: Lamb, veal shank with rosemary, mushroom dishes, duck, wild boar, hare, wild rabbit, savory stew, cassoulet
Fun fact: The estate comprises 17 hectares spread over 20 different plots with vines up to 70 years old. The vineyards are partly located on the slopes of Les Dentelles de Montmirail. The limestone subsoil is covered with calcareous clay and rock, and on the flatter part, it is sandy with much rock and has a west/north-westerly exposure. The planting consists of 70% Grenache Noir, 15% Cinsault, 14% Syrah, and 1% Mourvèdre.
