Patrick gained wine experience in London, including as a sommelier at Claridges, and then spent 5 years working in wine shops. After that, he returned to his former hometown of Reims to become an export manager for Gosset. He did that for 10 years until 2010. Then, he and his wife Sophie started a company exporting French wine. In 2015, while looking for new domains to export, they were offered 5 hectares of vineyard in the Château-Chalon appellation. Domaine des Carlines was born.
Description: White fruit like pear and lychee, ripe apple, and a fine creamy texture.
Pairs well with: Red mullet fried in butter, fatty smoked salmon.
Fun fact: They started with nothing, no cellar and no winery; they rented these from befriended winemakers nearby. The first vintage is 2016, and the grapes were almost ripe when they signed the contract.
