The story of Domaine Chapel begins in Morgon, winds its way through New York City, and then returns to Beaujolais. Domaine Chapel was founded by Michele Smith and David Chapel in 2016. Today, the Chapels operate 4 hectares of vineyards on the slopes of Beaujolais, spread across the Chiroubles and Fleurie crus. Anchored by a deep commitment to the natural environment and soil health, Chapel tends their vineyard plots by hand.
Description: Lots of fruit like black cherries, plum, and raspberry, lightly spicy, juicy and rustic.
Pairs well with: Charcuterie, hard cheeses, mushrooms, red meat.
Fun fact: Fermentation is carefully monitored and tasted daily to determine the pressing day. The free-run juice is separated just before the remaining berries are pressed in a horizontal press. The wines are returned to their barrels and complete fermentation in the spring, when the temperature naturally rises gradually.
