The story of Domaine Chapel begins in Morgon, weaves its way through New York City, and then returns to Beaujolais. Domaine Chapel was founded by Michele Smith and David Chapel in 2016. Today, the Chapels operate 4 hectares of vineyards on the slopes of Beaujolais, spread across the Chiroubles and Fleurie crus. Anchored by a deep commitment to the natural environment and soil health, Chapel cultivates their vineyard plots by hand.
Description: Red fruit with dark chocolate, rustic, light, supple, dry and fresh.
Pairs well with: Charcuterie, hard cheeses, mushrooms.
Fun fact: During pulp fermentation, whole bunches are left intact and undergo semi-carbonic maceration using their native yeasts. Protected by carbon dioxide, the grapes ferment as whole berries for 2 to 3 weeks in a closed vat.
