Éric Bordelet was originally a sommelier at the three-Michelin-starred restaurant L'Arpège in Paris before taking over the family estate in Southern Normandy in 1992, encouraged by his good friend, the iconic winemaker Didier Dagueneau. His mission: to make cider that can stand comparison with great wine. On 23 hectares of organic and biodynamic orchards, some thirty old apple varieties grow, some in the location of orchards that are centuries old. Each variety is harvested separately and ferments naturally. The Tendre comes from the same barrels as the Brut but retains a little residual sugar for a softer, semi-sweet style.
Description: Aromatic and fruity, honey and baked apple, fine, persistent perlage, subtle mineral finish that beautifully balances the sweetness.
Pairs well with: Cheese board, dessert, or simply as an aperitif.
Fun fact: Bordelet deliberately calls his cider "sidre" – the old Norman spelling – as a nod to the artisanal tradition he tries to uphold.
