In Pic Saint-Loup, one of the most beautiful (and now also most expensive...) terroirs of the Languedoc, with its hillsides and privileged microclimate, Peyrus has planted half Syrah, half Grenache and a little Mourvèdre. With confidence and consideration, Christophe and Françoise transform their naturally (the pesticide sprayer is never used; since 1999 they have been working biodynamically) healthy grapes into healthy, unfiltered wines. All plots are vinified separately. If they deem it necessary, they let the various wines mature for two years before making the final blends. A small portion is aged in vats, the rest in wood (no new wood).
Description: Raspberry, olive (olive trees once stood here), rosemary, cherries and beautifully soft.
Pairs well with: Lamb, game, spicy vegetable casserole.
Fun fact: Christophe Peyrus once sailed the world's oceans; now this driven individual, along with Françoise Julien, plays in the Champions League. Their wines are among the most sought-after in the entire Languedoc.
