Michel Chevré is considered one of the leading young producers in the Loire. In 2007 he founded Domaine Michel Chevré, and two years later he produced the cuvée Les Ecotards, which brought him renown. The grapes for Clos de l'Ecotard are grown on a three-hectare plot with limestone-clay soil, facing south, and are cultivated according to organic farming principles. This vineyard produces high-quality grapes that are exclusively hand-picked before being pressed.
Description: Ripe, saline freshness, lime with stone fruit and pear, and mineral. Long finish.
Pairs well with: Raw fish, lighter cold meat dishes.
Fun fact: Clos de l'Ecotard is a wine that represents one of the most ambitious 'chenins' available and is considered one of France's best dry wines.
