Chiussuma 'Pajarin 2018'

Very close to the border of the Aosta Valley, north of Turin, we find Chiussuma. It has been about 7 years since Matteo joined forces with Rudy and Alessandra Rovano. The name Chiussuma comes from the waterfall found near the Carema vineyard. Many wines from Piedmont are becoming out of reach in terms of volume and prices. At Chiussuma, the volumes are certainly not large, but the price-quality ratio could not be better. The wines are a direct reflection of their origin in a bottle. This area is not very well known, but it is the perfect place for authentic wines where everything is 100% Italian.

Description: Floral, stony, fatty texture, a little flint, structure, intense, juicy, good for decanting.

Pairs well with: Grilled sardines, ceviche, vitello tonnato, pheasant in white wine sauce, fennel salad, BBQ artichoke.

Fun fact: What makes this winery special is their dedication to restoring old, abandoned vineyards. They do almost all the work by hand: pruning, harvesting, and maintenance, because no machines can reach these steep pergola-trained slopes.
