The Languedoc is in Christophe's blood. He grew up in Larzac as the son of Jean-Claude, a struggling winemaker and beloved (as well as feared) founder and long-serving president of AOC Coteaux-du-Languedoc. Christophe, although chairman of the La Clape winemakers for 15 years, remained the son of. But now, 20 years after his father's retirement, he himself was elected president of CIVL Languedoc in 2022: a thankless job in a hornet's nest full of gossip, intrigue, jealousy, and conflicting interests. Fun fact: Because the wines are bottled more or less directly from the barrel or cuvée, they sometimes still contain a minimal amount of carbon dioxide. This keeps the wine 'fresh' longer and requires less sulfur. If you find this bothersome, simply decant the wine into a carafe.
