When you visit Nicolas Mariotti Bindi, you immediately realise: un futur grand, because he is bright, humorous, dedicated, and passionate about wine. He knows exactly what he wants and what he can do. Superb organic wines from (clay/limestone) terroir in Patrimonio, although often declassified as Vin de France. Born and raised in Corsica, Nicolas studied law in Paris, then suddenly decided to return to make wine. He apprenticed in Patrimonio with Arena and Giudicelli, became chef de culture at Leccia, and was allowed to make his own wine from old vineyards granted to him.
Description: Open, peppery, bright, a little defiant as it should be, fresh (characteristic 2024), some cranberries, inviting.
Delicious with: Cured meats, semi-hard cheeses such as Tomme, young Manchego or Corsican sheep's cheese, ratatouille or grilled vegetables, pork tenderloin or pork neck with herbs
Fun fact: Delicious when young, but feel free to lay down a few bottles too!
