When you visit Nicolas Mariotti Bindi, you immediately realize: a future great, as he is bright, humorous, dedicated, and his heart is ablaze for wine. He knows exactly what he wants and what he is capable of. He produces splendid organic wines from (clay/limestone) terroir in Patrimonio, although often declassified as Vin de France. Born and raised in Corsica, Nicolas studied law in Paris, then suddenly decided to return to make wine. He apprenticed in Patrimonio with Arena, Giudicelli, became chef de culture at Leccia, and was allowed to make his own wine from granted old vineyards there.
Description: Finely fresh with wildflowers and a cooling hint of fennel, anise, and mint.
Pairs well with: Fish and vegetarian appetizers, but also good with chicken.
Fun fact: Half of the white (Vermentino) goes into bottles after a year, the rest rests for another year in large amphorae. The difference is significant: the first is energetic on the fruit, the later version is more floral and subdued.
