The founders of An Approach to Relaxation are Carla and Richard Rza Betts, two wine lovers who met in the wine world. Richard was once a Master Sommelier but voluntarily relinquished that title in 2020, dissatisfied with the direction of the wine world he was part of. Together, they settled in Australia's Barossa Valley, where they found an old, dry-farmed, and organically managed vineyard on the sandy soils of Vine Vale, not far from their beloved Rza Block. The vines are 60 to 65 years old, own-rooted, and can truly be called wild; the owner prunes only once a year, and the vineyard is left to its own devices as much as possible. Nichon is a blend of 90% Semillon and 10% Sauvignon Blanc, with the grapes undergoing a long, twelve-hour pressing and then aging for a year in second-hand French oak.

Description: Texturally rich and layered, lemon curd, honey, flint, structural minerality, a hint of pink grapefruit, medium-bodied.

Pairs well with: Fresh oysters, roasted chicken, goat cheese salad.

Fun fact: Nichon is bottled unfiltered and unfined, preserving all its natural texture and character.
