We are in the Haute Vallée de l'Aude, Limoux appellation. The Burgundian families Collovray & Terrier already had a successful wine business in the Mâcon when they started a new wine adventure here in 1997 with Domaine Altugnac, fifty kilometers south of Carcassonne. They were impressed by the beautiful landscape at the foot of the Pyrenees, where they also found two Burgundian icons: chardonnay and pinot noir. They now run 95 hectares of vineyard here, which produces half white and half red wines. At an altitude of 350-500 meters, their grapes benefit from a slightly cooler Mediterranean mountain climate, as the Pyrenees are not far away.

Description: Light red, juicy and fruity, cherries, floral, pepper and mocha.

Pairs well with: Poultry, cheese, charcuterie, steak tartare.

Fun fact: The soil is poor and rich in limestone. The temperature differences between day and night are significant due to the 450m high location, which ensures a slow, gradual ripening of the grapes.
