We are in the Haute Vallée de l'Aude, Limoux appellation. The Burgundian families Collovray & Terrier already had a successful wine business in the Mâcon when they started a new wine adventure here in 1997 with Domaine Altugnac, fifty kilometers south of Carcassonne. They were impressed by the beautiful landscape at the foot of the Pyrenees, where they also found two Burgundian icons: Chardonnay and Pinot Noir. They now manage 95 hectares of vineyards here, producing half white and half red wines. At an altitude of 350-500 meters, their grapes benefit from a slightly cooler Mediterranean mountain climate, as the Pyrenees are not far away.
Description: Rich wine with structure, fine acidity, creamy, herbs, a hint of toast, made in a Burgundy style.
Delicious with: Poultry, cheese, fish, tapas.
Fun fact: The wine ferments and ages for 12 months in oak barrels (20% new) and then rests in stainless steel tanks until spring.
