Alberto Orte is a pioneer in the revival of indigenous grape varieties in Marco de Jerez. After years of research in historical archives and conversations with older generations of winemakers, he has identified over 200 old clones of Palomino Fino and reintroduced 26 historic white and red grape varieties to the region. The Vara y Pulgar Blanco combines Palomino Fino from albariza soils with Vijiriega Blanca and Malvasía, fermented in oak barrels and aged for 12 months in foudres and barriques. A dry, unfortified white wine from Jerez – something that seemed unthinkable for decades.
Description: Expressive and fresh, with aromas of citrus, stone fruit, white flowers and a characteristic saline edge. Balanced, juicy and persistent, with a beautiful limestone texture on the palate.
Pairs well with: Gambas al ajillo, grilled sardines, fried fish or calamari – classic Andalusian tapas.
Fun fact: 'Vara y Pulgar' refers to a traditional Jerez pruning technique – a nod to the age-old viticultural tradition that Orte restores with this wine.
