According to insiders, along with Elisabetta Foradori and Alexandre Bain, he is one of the best 'vin naturel' winemakers on this planet. Jean-François worked for ten years at Domaine Marc Morey in Chassagne-Montrachet before returning to the Jura in 1998 with a wealth of knowledge. The Ganevats have been making wine in the hamlet of Rotalier since 1650. In 1999, Jean-François drastically changed course, making the switch to organic viticulture before adopting biodynamic principles in 2005. It was very hard work initially, as the 8-hectare vineyard is spread across 36 different plots and demanded the utmost from Jean-François.
Description: Medium-bodied and very fruity, lively fresh acidity, soft tannins, and a juicy, almost playful structure that lives up to its name "J'en Veux Encore" (literally: "I want more of it")
